This is an easy and delicious recipe- best served warm from the oven with a dollop of whipped cream. You can use frozen berries for this recipe, but I find fresh to taste best.
Recipe from Driscoll's (original link to recipe): https://www.driscolls.com/recipe/mixed-berry-cobbler
For the berry layer:
16 oz (1 package) strawberries, sliced
6 oz (1 package) blueberries
6 oz (1 package) blackberries
6 oz (1 package) raspberries
2 tbsp lemon juice
1/2 cup sugar
3 tbsp corn starch
For the dough:
1 1/2 cups all-purpose flour
4 tbsp sugar
1 1/2 tsp baking powder
6 tbsp butter
1 cup heavy cream
Preheat oven to 350 F. Lightly grease a square baking dish.
Mix berries in a large bowl and add lemon juice. In a separate bowl, mix sugar and corn starch, then pour over fruit and mix. Transfer mixture into baking dish, and set aside.
In a medium size bowl, mix flour, 3 tbsp sugar, and baking powder. Slice butter into cubes and then work into flour mixture using a pastry blender or your fingers, until coarse crumbs are formed. Add heavy cream and mix until a soft dough forms.
Using an ice cream scoop or spoon, drop scoops of dough on top of the berry mixture. Sprinkle the remaining tablespoon of sugar over the dough.
Bake for 50 minutes or until golden with berry mixture bubbling. Serve warm with whipped cream.
