Happy Saturday! I had the honor and pleasure of interviewing Angelina Sims, CVT, for my next video. In the video she talks about her job as a critical care and internal medicine technician, and was nice enough to share one of her recipes with me! Ingredients
Crust:
2 cups flour
1/2 cup sugar
1/4 tsp salt
1 cup salted butter, cut into 1/4" slices and very cold
FIlling:
1 1/2 cups sugar
1/4 cup flour
4 large eggs
zest and juice of 4 lemons
Topping:
~1/4 cup powdered sugar
Directions
- Preheat oven to 350 degrees. Grab a 9x13 cake pan.
Crust:
- In a medium bowl; whisk together flour, sugar, and salt. Use a pastry cutter to blend butter into pea sized pieces. Press into bottom of cake pan, bake for 20 minutes.
Filling:
- In a medium bowl; whisk together sugar and flour, add eggs and mix until well blended. Stir in lemon zest and juice. Pour over the crust, bake for 20 minutes.
Topping:
Allow to cool until room temp. Chill in the fridge for at least 2 hours. When ready to serve, Use a strainer to lightly dust powdered sugar all over the top. Cut into desired size pieces.
