Lina's Lemon Bars
Happy Saturday! I had the honor and pleasure of interviewing Angelina Sims, CVT, for my next video. In the video she talks about her job as a critical care and internal medicine technician, and was nice enough to share one of her recipes with me! 2 cups flour
1/2 cup sugar
1/4 tsp salt
1 cup salted butter, cut into 1/4" slices and very cold
1 1/2 cups sugar
1/4 cup flour
4 large eggs
zest and juice of 4 lemons
~1/4 cup powdered sugar
- Preheat oven to 350 degrees. Grab a 9x13 cake pan.
- In a medium bowl; whisk together flour, sugar, and salt. Use a pastry cutter to blend butter into pea sized pieces. Press into bottom of cake pan, bake for 20 minutes.
- In a medium bowl; whisk together sugar and flour, add eggs and mix until well blended. Stir in lemon zest and juice. Pour over the crust, bake for 20 minutes.
Allow to cool until room temp. Chill in the fridge for at least 2 hours. When ready to serve, Use a strainer to lightly dust powdered sugar all over the top. Cut into desired size pieces.
