
These biscuits are quick, easy, and delicious. It goes great with a bowl of chili or soup, especially during the winter months. You can follow along with my recipe in my video at the following link:

Makes about 12-15 biscuits
2 cups all purpose flour
2 tsp baking powder
1 tsp salt
1/2 tsp baking soda
1/2 tsp Cajun seasoning (I like Tony Chachere's!)
1/4 cup cold butter cut into small cubes
3/4 cup buttermilk
1 cup shredded cheddar
1-2 jalapenos, finely chopped
1 tbsp unsalted melted butter
Preheat oven to 450. Line baking sheet with parchment.
Whisk flour, baking powder, salt, baking soda, cayenne, black pepper in a large bowl.
Add cold butter and mix with pastry blender or hands until the mixture is grainy.
Add 3/4 buttermilk and mix - then keep adding small amounts and mix until a dough forms.
Mix in cheese and jalapenos.
Place dough on lightly floured surface and roll out to 1/2 inch thick.
Cut circles out of the rolled dough with a 2 1/2 inch cutter (I use a circular cookie cutter).
Place biscuits in pan and brush tops with melted butter.
Bake 12-14 mins or until golden brown.
